The New Sheet Pan Meals
Inspired Go is known mainly for their salad kits but they have recently introduced a new edition to their lineup – their incredible Sheet Pan Meals which I have to talk more about. I didn’t know what to expect but Inspired Go was like you need to try our new sheet pan meals and I am so glad I did! What was even more shocking was that my daughter who is 4 years old and probably the pickiest eater in the whole wide world (all parents can relate) loves their Mediterranean Pasta Salad which we were all shocked by. Initially, I didn’t think she would like it because kids that are so young generally don’t really like certain vinaigrettes but she loves this one and wouldn’t stop eating. I am so thankful she is eating and loving something healthy.
This super easy pasta salad is great because it can be made ahead of time and can either be enjoyed as a meal on its own or as an excellent accompaniment to other protein dishes. You only really need to cook the Rotini noodles and then mix so anyone can do it! I love the artichoke hearts (and even if you aren’t a lover of this vegetable you will be after this meal). The artichokes give it a nice salty and sour tang that your taste buds will thank you for. Combined with olives, sundried tomatoes, grape tomatoes, a creamy pop from the feta cheese and their homemade herb vinaigrette, this pasta salad will give you a nice taste of the Mediterranean.
